Great way to share any recipes we have created some wonderful food that is simple and creative from what is produced at the Wagga Demo Gardens!
Pistachio and Fennel biscuits
(organic wherever possible)
80g ground pistachios
3 tblspns ground fennel seeds
2/3 cup dark brown sugar
2 tblspns molasses
1 large egg
320 plain flour
warm oven to 160C
Cream butter, sugar and molasses together until ‘light and fluffy’
Add the egg and whisk it in sloooooowly.
Fold in the ground pistachio nuts, fennel seeds and flour.
Break pastry into four pieces and roll each separately to about 1/4″ thick (don’t know that is in cms!)
I cook them on baking paper which I re-use about 20 times…..
cook for about 8 – 10 minutes and cool on wire racks.
